For me Autumn is the start of soup season, and I love homemade soup. In the past 2 weeks I have made three different batches of soup. My first soup of the season is my favourite, Pumpkin Soup. Then last week after a bad asthma and allergy attack I made chicken stock and homemade chicken noodle soup. Tonight I made cream of vegetable soup.
For me soup is one of the best meals there is, full of flavor and all round goodness. Some of my friends have asked for the recipes, so below the recipes and photos.
Pumpkin Soup
1 Brown onion peeled and sliced
1 small pumpkin peeled & diced
3 rashers bacon, chopped
Seasoning. Your favorite. Garlic, chili etc.
Chicken stock
200ml Cream
In a large saucepan, sauté onion, garlic, chili and bacon. Measure the pumpkin in a large measuring jug. Add the pumpkin to the pan and toss. Measure out chicken stock to match how many measuring jugs of pumpkin you had. Pour into the pan and bring to the boil, reduce heat and simmer for 20 mins until pumpkin is soft. Use a wand to puree the mix, add the cream and stir heat.
I sometimes mix potato or sweet potato with the pumpkin. Also, if in the mood delete the bacon and use vegetable stock for a vegetarian option. If you want Thai flavoured pumpkin soup just add those flavourings and use coconut cream instead of cream. ENJOY😊

Chicken Stock
1kg Chicken bones
1 brown onion, chopped coarsely
2 sticks Celery or half small celeriac chopped coarsely
1 carrot, chopped coarsely
2 bay leaves
1 teaspoon black peppercorns
2.5 litres water (10 cups)
Combine ingredients in large saucepan. Simmer uncovered for approx. 1 hour. Strain. When bones cool enough remove any chicken meat and chop and reserve.
Chicken Noodle Soup
Use homemade chicken stock.
1 brown onion chopped
2 sticks Celery or half small celeriac chopped coarsely
2 carrots, chopped coarsely
2 garlic cloves
Additional vegetables: 2 potatoes, 1 small zucchini, 1 cup peas.
2 small fine pasta nests.
In large saucepan saute onion, garlic. Add chicken stock, reserved chicken meat, and vegetables. Simmer for 30minutes. Add pasta and simmer another 10mins until tender.
