These are an all round favourite, I like to use a mix of choc bits, including butterscotch or other flavored choc bits, its up to you. The mix doesn’t tend to spread out too much so they hold the shape nicely. Yesterday when I baked them I added some peppermint essence, you could add other flavours that go with chocolate to change the taste. As always enjoy
90g butter – softened
1 teaspoon vanilla essence
83g castor sugar
83g soft brown sugar
1 egg
75g self raising flour
115g plain flour
40g each of white, milk and dark choc bits for a total of 120g
62g chopped pecans/walnuts
Method:
Beat butter, vanilla, and sugars in a bowl with electric mixer until light and fluffy, add egg and beat. Stir in flours, Choc bits and nuts.
Roll tablespoons of mixture and place on a large baking tray lined with paper. Bake in a moderate oven 12 -15 minutes or until firm and lightly browned. Stand on trays for 5 minutes before moving onto wire rack to cool.
Makes approx. 24.
