Basil and Grana Padano Icecream

A friend of mine started in April, the Quarantine cooking games, where you get 5 items each week and you get to choose what to make. This weeks ingredients – Lemon, Chicken, White Wine, Corn and Icecream. The first thing I thought of was how to incorporate icecream in a savoury dish. A little research and this is what I came up with.

Basil and Grana Padano Icecream
1/2 bunch basil
125ml milk
50ml Double cream
50g Grana Padano
1 tablespoon brandy or white wine
125g ricotta

Combine chopped basil, milk and cream in a saucepan and bring to the boil. Remove from heat and add cheese and stir until smooth. Cool
Add brandy and ricotta and beat until smooth. Freeze overnight. I would suggest freezing in deep ice cube trays so that you have a small amount for each serving. As you can see in the photo I didn’t do this as I forgot how hard homemade icecream freezes.

In answer to the question would I make it again, definitely yes, its a cool basil cheese sauce when it melts.
