I lived for 5 years in United Arab Emirates, and fell in love with the food, people and the desert. Anyway one of my favorite drinks was lemon and mint, with lots of ice its very refreshing. I was reminiscing with someone I know and said how I missed it, he suggested I make my own. I have been experimenting with making a mint syrup and then adding fresh lemon juice and sparkling water, but I still couldn’t get the flavor profile right. Today I had an epiphany, what if I made my favorite lemonade, and added mint to it. So used the food processor to blend the sugar and mint then followed the rest of the recipe.

Ingredients
Juice and grated rind of 3 lemons
1 bunch (or packet) fresh mint
450 g white sugar
25 g citric acid
1 litre boiling water
Put sugar and mint in a food processor, blend until fine, add to a large bowl with the other ingredients, pour on the boiling water. Stir well until the sugar has dissolved. Cool and refrigerate. Store in glass jar/bottles.
NB. The more mint you add the greener the drink will be, its up to you.
I dont like drinks being too sweet so 1/3 of the drink in a glass topped with 2/3 sparkling water and ice….Enjoy 🙂
